Modernist Kitchen – Pressure Cooker Garlic Confit

To kick off my challenge of cooking through the Modernist Cuisine at Home and also trying my hand at producing a cooking video I’ve decided to keep it simple.  The writers of Modernist Cuisine at Home developed some really great uses for the pressure cooker.  They realized that it was a kitchen device far too underutilized with home cooks, and chose to dedicate a lot of space in the book discussing different uses and techniques for the pressure cooker.  Besides saving cooks time when braising tough cuts of meat, the pressure cooker can be used to speed up browning vegetables and developing intense flavors in stocks and purees.  In this case the chef authors are using the advantages of the pressure cooker to quickly produce an intensely flavored confit of garlic in a relative short period of time.  The garlic produced in this video is very rich in flavor and spreadably soft in texture, almost like a butter.  The olive oil has wonderful garlic flavor and aromas, and can be reused on such things as salads, finishing dishes or to cook things with in hot pans. Local, Fresh, Sustainable – High Road Craft Ice Cream

You can find some of the best young entrepreneurs in the South and this story is about two such locals. High Road Craft Ice Cream & Sorbet is the brain child of Chef Keith Schroeder and Hunter Thornton, two of the niceset and hard working guys you’ll ever meet. They have combined their passion for making the best local, organic, and just down right delicious ice cream with their desire to build a business that allows them to grow along side other local Southern businesses.  The boys of High Road are developing symbiotic relationships with restaurants, farmers and local producers that makes you proud for them and will bring a smile to your face when you find their artisanal ice cream on your plate. Local, Fresh, Sustainable – South City Kitchen

This month we were lucky enough to sit down and talk with Executive Chef Chip Ulbrich of South City Kitchen.  We discussed everything from the challenges of running “Twin” restaurants in the Atlanta metro area, to local sourcing of ingredients, his suppliers, his Yankee past and his own personal Thanksgiving traditions. Chef Ulbrich also talked about why he thinks Southern food has become so popular and how place like South City Kitchen has survived in Atlanta to become local culinary institution.  So enjoy part two of our culinary discovery with Chef Chip Ulbrich.  Stay Hungry Y’all.

If you’re going to be in Atlanta area for Thanksgiving and you’re looking for a great place to dine.  Both the Midtown and Vinings locations of South City Kitchen will be open serving special Thanksgiving day menus starting at 11:00 am for $39.95 for adults and $19.95 for kids 12 and under. Southern Cooking – Collard Greens

We had a really great opportunity this month to sit down with Executive Chef Chip Ulbrich of South City Kitchen. If your not familiar with South City Kitchen, it’s a great Southern style restaurant with two locations in and around the Atlanta,GA area known for dishes like their Fried Chicken and Fried Green Tomatoes.  Chef Chip spent some time showing us how to cook Collard Greens in less than 30 minutes that are flavorful, full of texture and easy to prepare. Local, Fresh, Sustainable – Behind The Kitchen : Local 3

We continue to follow the progress of Chef Chris Hall and the opening of the restaurant Local Three in Atlanta, GA. Chris gave us an update and a behind the scenes tour of the extraordinary kitchen and all its gadgetry. He also talked about their expansion and education program they have planned to utilize all the extra kitchen space. He even gave us a sneak peak at a few menu items he has planned that will bring a smile to your face. Local, Fresh, Sustainable – 5 Seasons Brewing

We continue our quest for local Southerners that are doing things Local, Fresh, and Sustainable and have stumbled upon a marriage of food and brew.  Meet Crawford Moran, the Brewmaster at 5 Seasons Brewing, and a Southerner with a passion for bringing seasonality and sustainability to the micro-brewing industry.
